Tiramisu

Mmm, my mom and I made this for Father’s Day. Sure, it might not look that great (my photography skills and cutting skills are fail) but it’s so good <33. It wasn’t hard to make at all, though the ingredients are kind of expensive (at least the mascarpone cheese is; that was $10 alone, wtf). Tiramisu = coffee goodness. Yay coffee! I’m not sure where the recipe came from; my mom just printed it off someplace, but I added some changes. By the way, that’s cocoa powder sprinkled on top. Oh, and it calls for some wine, but it turns out my dad drank it all. >_> I just substituted that with an equal amount of milk, and it worked fine.

Tiramisu:
Ingredients:

For the ladyfinger layers:

  • 36 ladyfinger cookies (approx.)

For the coffee dip:

  • 1-1/2 cups espresso coffee (I used 6 tsp instant coffee in 1 cup of boiling water)
  • 2 teaspoons sugar

For the zabaglione filling:

  • 4 egg yolks
  • 1/2 cup sugar
  • 1/2 cup Marsala wine (I used milk instead)
  • 1 lb. (450 grams) mascarpone cheese, at room temperature
  • 1 cup heavy whipping cream

Directions:

  1. Prepare a strong espresso coffee, about 1-1/2 cups. Dissolve 2 teaspoons of sugar in it, when the coffee is still hot. Let the coffee cool at room temperature. (I dissolved 6 teaspoons of instant coffee in 1 cup of boiling water instead.)
  2. Beat the egg yolks in a heat proof boil or in the boil of a double boiler until they become fluffy (mine was more frothy). Beat in the sugar and the Marsala wine (milk in my case).
  3. Transfer the bowl over a pan of simmering water, and beat until cream thickens. Remove from heat.
  4. With a rubber spatula, mash the mascarpone cheese in a bowl until creamy. Add the egg yolk/sugar/wine (zabaglione) mixture into the mascarpone and beat to mix very well.
  5. Whip the cream. Fold whipped cream into the mascarpone/zabaglione mixture until smooth.
  6. Lightly soak the ladyfingers in the coffee. Arrange them in one layer in a 13×9 inch container.
  7. Evenly distribute half of the zabaglione cream over the ladyfingers. Cover with another layer of coffee-soaked ladyfingers, and top the rest with cream.
  8. Sprinkle with cocoa powder and refrigerate for about 3-4 hours before serving.
